Amazing Grass Wheat Grass Bread - Rachel Jane Bert

Makes 1 loaf

Measure
1-cup milk, scalded
1-tablespoon sugar or molasses
1-tablespoon butter
1 ½ teaspoons salt
1 yeast packet dissolved in ¼ cup boiling water, cooled until lukewarm
1 ¼ cup water, add a bit more to reach desired consistency
3 ¼ to 4 cups flour to make a firm dough
2 heaping tablespoons Amazing Grass wheat grass powder

Dough
Pour hot liquid over sugar, salt and butter. Cool until luke warm. Add yeast, then beat in sufficient flour to make a dough which can be lifted in a mass on the spoon leaving bowl free from small amount of flour on board until loaf is smooth, elastic to the touch, and stiff enough that it will not stick to a clean board when kneading. This will average about 10 minutes. To knead bread properly, fold dough from the back toward the center with finger tips, then press down and away from the kneader with palms of hands. Do this twice, then give dough a quarter turn on board and repeat process. Always turn in same direction. Do not use more flour than is necessary. Put in oiled bowl or one mixed with cold water. Oil top or cover lightly to prevent formation of a crust. Let rise in warm place until doubled in bulk. It will then feel tender and a touch of the finger will leave an impression. Work bread down and let rise a second time until doubled in bulk.

Loaf
Knead light dough on an unfloured board (to prevent streaks) just enough to distribute gas bubbles evenly. Shape into a ball. Then make into a roll longer than the pan handling as lightly and quickly as possible. Flatten, fold ends to center, press firmly and seal, fold sides to center and seal. Shape into a loaf, place in an oiled pan, smooth side up. The pan should not be more than half full. Let rise in a warm place until doubled in bulk.

Baking
Start baking in a hot oven—400 degrees F. After 10 minutes reduce heat to 350 degrees, and bake for 20 additional minutes. If browned sufficiently after the first 10 minutes, place paper over loaves to prevent crust from becoming too brown.

Analysis
Comparing Amazing Grass wheat grass bread to other white breads, it will be higher in protein, fiber, vitamin A, folic acid, and iron. You can use a bit more or less Amazing Grass wheat grass powder depending on your taste.

Amazing Grass Wheat GrassPizza Dough --- to die for!

Amount Measure Ingredient -- Preparation Method
1 Package active dry yeast
2 3/4 cups Bread flour
1/2 tsp Salt
1/4 cup Amazing Grass Wheat Grass

Pour the water into a medium-sized mixing bowl and sprinkle in the yeast. Stir gently with a fork until the yeast has dissolved. Add 1 cup of flour and the salt. Mix thoroughly with a wooden spoon. Add the second cup of flour to the ¼ cup of Amazing Grass wheat grass and dry mix well. After the second cup of flour/wheat grass mixture has been mixed in, the dough will start coming away from the sides of the bowl and should begin to form a soft, sticky mass. It is now ready to be kneaded. Measure out the last ¾ cup of flour. Sprinkle some over the work surface and flour your hands generously. Remove all of the dough from the bowl and begin to work the mass by kneading the additional flour in a bit at a time. Knead the dough until it no longer feels sticky. Continue kneading only until the dough is smooth and elastic and no lines of raw white flour show. The whole process should take 5 to 10 minutes. Lightly oil a 2-quart bowl with vegetable oil. Roll the ball of dough around in the bowl to coat it with a thin film of oil. Tightly seal the bowl with plastic wrap. Place the bowl in a warm draft-free place. When the dough has doubled in bulk (45 to 60 minutes), punch it down; knead it for 2 to 3 minutes. Then return it to the bowl and refrigerate for 15 minutes before shaping. The dough should never be rolled out with a rolling pin. This crushes the edges and affects the final texture. The stretching method is the only suitable way to shape the dough.

Amazing Grass Lemon Poppy Seed Wheat Grass Muffins

1/3 cup skim milk
1/4 cup vegetable oil
1 (6 ounce) container nonfat lemon yogurt
1/4 cup egg substitute
1 3/4 cups all-purpose flour
1/4 cup Amazing Grass dehydrated wheat grass
1/4-cup sugar
2 tablespoons poppy seeds
1 tablespoon grated lemon peel
2 1/2 teaspoons baking powder
1/2-teaspoon baking soda
1/2-teaspoon salt

Heat oven to 400 degrees. Line 12 medium muffin cups with paper baking cups. Beat milk, oil, yogurt and egg substitute in large bowl. Stir in remaining ingredients just until moistened. Divide batter evenly among muffin cups (should be about 3/4 full). Bake 16-18 minutes or until golden brown. Immediately remove from pan and cool on a wire rack.

Amazing Grass Wheat Grass Amazingly great tasting Oatmeal Chocolate Chip Cookies

These cookies are a combination of oatmeal, chocolate chips and Amazing Grass wheat grass. They are very rich, but very tasty, and wheat grass healthy! Yield approximately 60 cookies.

4 cups flour (sift before measuring)
1/2 cup Amazing Grass dehydrated wheat grass
5 cups rolled oats (oatmeal)
4 large eggs, use 5 if medium
2 tsp. vanilla extract
2 cups butter
2 cups sugar (granulated white), we cut in half sometimes to make them less sweet
2 cups brown sugar (dark brown)
4 large eggs, use 5 if medium
2 tsp. vanilla extract
1 tsp. salt
2 tsp. baking soda
2 tsp. baking powder
24oz. Chocolate chunks (We prefer good ole’ “Bay Area” dark chocoloate Ghirardelli morsels)
3 cups chopped nuts (We prefer walnuts, but you can use any kind, or skip all together depending on your taste)

Preheat oven to 375 degrees
+ Cream together the butter and the sugars
+ Sift together flour, wheat grass, oatmeal, salt, baking soda, baking powder, and chocolate
+ Add eggs and vanilla to creamed sugar and butter, then mix all ingredients together.
+ Mix chocolate chips and nuts into mixture.
+ Drop by onto ungreased cookie sheet in small drops.
+ Bake 6 minutes or until done.

A blender works very well to powder the oats and the chocolate. The blender chops the oatmeal finer than a food processor. We prefer our cookies just barely done, so that they remain chewy. Great with cold milk!

Note also that oatmeal is not the same thing as quick-cooking oats or instant oatmeal. Oatmeal means rolled oats,' such as Quaker rolled oats.

Raw SuperFood Dehydrated Crackers

Amazing Grass Goddess Linda Burt gave us this tasty recipe using our Green SuperFood.

Soak overnight
1 Cup raw almonds
½ Cup raw walnuts
½ Cup sunflower seeds
In morning drain and rinse.
Process in food processor and then remove to a bowl.
Blend all ingredients in food processor adding one at a time
1 stalk of celery cut in pieces
2 med. carrots chopped
2 zucchini chopped
½ Cup chopped cilantro or parsley
½ cup sun-dried tomatoes soaked or 1 chopped tomato
½ Cup raw organic Tahini
1 garlic clove chopped
Juice of ½ of a lemon
1 Tablespoon Nama Shoyu soy sauce or wheat free tamari
1 ½ teas. oregano or Italian seasoning
1 teas. Himalayan salt
¼ Cup Amazing Grass SuperFood or Organic Wheat Grass powder

After all ingredients are chopped fine, add the Green SuperFood or Wheat Grass along with nuts and blend
Spread onto Teflon dehydrator sheets approximately ¼ inch thick. Dehydrate at low temperature. After a few hours slice into small pieces and turn over.

Finish dehydrating. Enjoy!

1 scoop Amazing Grass Kidz SuperFood (or more if you want to feel really amazing!)
1 cup frozen banana slices (or 1 fresh banana and 1/2 cup ice)*
1 cup soymilk, rice milk, or dairy milk

Put in blender and blend on medium for 1-2 minutes until smooth.

Amazing Chunky Monkey Smoothie

Another new recipe from Joanne Maggi. This delicious treat is a real crowd pleaser!

2 Scoops Amazing Grass Kidz SuperFood
1 cup chocolate milk (dairy, rice, or soy; you may also use a regular milk for a less intense chocolate experience)
1 banana and 3 ice cubes
1/4-1/2 cup peanut butter, such as Whole Kidz Chunky (optional)

Mix-ins:
1/4 cup chocolate chunks or chips (optional)
1/4 cup roasted, salted peanuts (optional)
½ cup banana slices

Blend the first 5 ingredients until smooth. Adjust to taste. Pour in glasses ¾ full and stir in the mix-ins if using. Serve immediately.
Serves 2-4
