INGREDIENTS:
Serves 4

  • 1 head bibb or romaine lettuce
  • 1 cup canned black beans
  • ½ cup hummus
  • 1 ripe avocado, peeled, pitted and diced
  • ½ cup salsa or pico de gallo
  • 1 cup shredded purple cabbage
  • 1 large carrot, shredded
  • 1 Tbsp finely chopped fresh cilantro
  • Juice of 1 large lime
  • 2 Tbsp slivered almonds
  • Sea salt and freshly ground pepper, to taste

DIRECTIONS:

  • Place each leaf of lettuce on a flat surface.
  • Top with black beans, hummus, avocado, salsa, cabbage, carrots, cilantro, a drizzle of lime juice, sea salt and pepper and a sprinkle of almonds.
