INGREDIENTS

  • 1 lb. whole grain pasta
  • 5 fresh basil leaves
  • ½ cup pine nuts or cashews
  • 2 Tbsp. fresh lemon juice
  • 1 clove fresh garlic, pressed
  • ½ cup olive oil
  • 1/3 cup Amazing Grass Wheat Grass
  • 2 ripe avocados, pitted and peeled

DIRECTIONS

  1. In a large pot, bring water to a boil; add pasta and cook according to package directions.
  2. Meanwhile, place the basil leaves, nuts, garlic, and lemon juice in a food processor, pulsing several times.
  3. With the food processor on low, slowly add the olive oil and avocados until smooth. Occasionally scrape down the sides to ensure full blend.
  4. Drain pasta and remove from heat.
  5. Transfer pasta to a serving bowl and gently toss with pesto.
  6. Salt and pepper to taste.
