DIRECTIONS:

  • Preheat oven to 350.
  • Combine monk fruit and coconut oil or butter in a medium sized mixing bowl until well combined.
  • Add egg and vanilla followed by the remaining dry ingredients, minus the peppermint topping and chocolate chunks.
  • Once fully combined, carefully mix in the chocolate chunks.
  • On a parchment-lined baking sheet, roll dough into 1 – 1/5 inch balls. These cookies will flatten on their own so you do not need to flatten them.
  • Add a bit of the crushed peppermint candy to the top of each cookie and bake for about 10 minutes until the cookies have settled and are crispy around the outsides.
  • Cool and enjoy!
