INGREDIENTS

  • 2-3¬†kale leaves
  • 1 beet
  • 1/2 cup of matchstick carrots
  • 1¬†blood orange
  • 1/4 cup sliced almonds
  • 1/4 cup finely diced red onion

DRESSING:

  • 1-2 tbsp Extra Virgin Olive oil
  • fresh squeezed lemon juice
  • salt, to taste
  • pepper, to taste

DIRECTIONS

  1. Rinse and cut kale. In a salad bowl, mix kale, beets, carrots, blood oranges, red onions, and top with sliced almonds.
  2. Dressing – Mix olive oil, lemon juice, salt, pepper
  3. Pour dressing over salad & enjoy!
