Fall Harvest Overnight Oats


  • 1 cup rolled oats (gluten-free if necessary)
  • 2 tablespoons chia seeds
  • 1 scoop Amazing Protein Digest Tahitian Vanilla
  • 1 teaspoon cinnamon
  • 1 ½ cups unsweetened non-dairy milk
  • ½ cup unsweetened pumpkin puree
  • 1 honeycrisp apple, diced
  • 2 tablespoons chopped walnuts


  1. Add the oats, chia seeds, Amazing Protein Digest Tahitian Vanilla, and cinnamon to a bowl and mix well.
  2. Add the milk, pumpkin puree, and half of the diced apple to the bowl, stirring until evenly combined. Transfer into glass jars, then top with the remaining apple and chopped walnuts.
  3. Store in the fridge for at least 4 hours, preferably overnight. Serve chilled.
