Holiday Cookie Energy Bar Recipe

INGREDIENTS:

  • 8 pitted dates
  • ½ cup gluten-free oats
  • 1 cup cashews
  • ¼ cup almond butter
  • 1 scoop Green SuperFood Holiday Cookie
  • 1 teaspoon maple syrup, or agave or honey (optional)

DIRECTIONS:

  1. In a food processor add all ingredients and mix until evenly ground and a sticky crumb forms
  2. Line a pan with wax paper, parchment or plastic, scoop in the mixture then add one more layer of wax paper, parchment or plastic
  3. Press mixture using your hands until it has an even thickness
  4. Refrigerate until firm then cut into bars
  5. Wrap in wax paper or parchment and tie with string or store with wax paper, parchment or plastic between bars
  6. Enjoy!
