Maple Crumble Oat Muffins

There’s muffin better than a plant protein-packed snack that’s both nutritious and delicious. 😋 And when it’s this easy to make, there’s no reason to miss out. Baking these together as a family is a wonderful way to bond and teach about the importance of healthier snacking.

Ingredients

Dry Ingredients:
  • 1 ½ cups oat flour (store-bought or blend 1 ½ cups rolled oats into a fine meal)
  • 2 scoops Amazing Grass Vanilla Plant Protein
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ½ tsp cinnamon
  • ¼ tsp ginger
 
Wet Ingredients:
  • ½ cup maple syrup (use ⅓ cup to make it less sweet)
  • ½ cup applesauce
  • ¼ cup melted butter or coconut oil
  • ½ cup milk of choice
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup chopped pecans (optional)
 
For Crumble:
  • ¼ cup rolled oats
  • 1 tbsp flour (all-purpose or gluten-free works)
  • 2 tbsp brown sugar or coconut sugar
  • 2 tbsp softened butter or coconut oil

Directions

  1. Preheat oven to 350. Line or grease a 12-cup muffin tin and set aside.
  2. Combine all dry ingredients in a medium bowl. Stir to combine.
  3. Combine all wet ingredients in a large bowl. Whisk well to combine.
  4. Fold dry ingredients into wet. Scoop into muffin cups, filling ¾ way full.
  5. For the crumble, combine oats with flour and sugar. Stir in butter or coconut oil until crumbly. Spoon over the top of each muffin.
  6. Bake for 22-24 minutes, until a toothpick comes out clean. Cool and enjoy!
