Peppermint SuperFood Fudge Truffles


  • 1 1/2 cup medjool dates/ pitted
  • 1/4 cup fresh orange juice
  • ½ cup coconut oil (warmed till liquid)
  • 1 tsp peppermint extract
  • 1 tsp vanilla extract
  • 1 cup raw cacao powder
  • 1 tsp cinnamon
  • ½ tsp sea salt
  • 1/4 cup cacao nibs
  • 1/4 cup goji berries
  • 1/4 cup Manitoba Harvest hemp seeds
  • 1/4 cup Chocolate Green SuperFood


  • 1/4 cup dried shredded coconut
  • 1/4 cup goji berries
  • 1/4 cup pistachios


  1. Combine dates, coconut oil, peppermint and vanilla extracts and fresh orange juice in the food processor till smooth.
  2. Add cocoa, cinnamon, chocolate green superfood and salt to the date mixture and process till well combined.
  3. Pour mixture into bowl and stir in nibs, goji berries, hemp seeds.
  4. Form into small balls by hand.
  5. Pulse remaining 1/4 cup dried shredded coconut and 1/4 cup goji berries and 1/4 cup pistachios in food processor till fine and the pour in a bowl.
  6. Roll Truffles in goji – coconut – pistachio mixture and gently press mixture so it sticks to outside of truffle.
  7. Put in refrigerator for one hour or till firm.
  8. Optional Truffle Squares: press mix into flat tray and distribute goji – coconut – pistachio mixture on top pressing it gently into the surface and then refrigerate till firm.
  9. Cut into desired servings and Enjoy!
