Our brand-new Protein & Kale is a simple blend of plant-based protein combined with organic leafy greens. Each serving provides 20 grams of plant-based protein from organic pea, chia and quinoa protein, and the equivalent of 1 cup of leafy greens from kale, wheat grass, barley grass & alfalfa – organically grown and harvested on our family farm.

Suggested Use
Mix one serving with 12 or more oz. of water, juice, or mixed into your favorite smoothie. Scoop, stir, smile!

Hey mango season, we’ve been waiting for ya! This fruity protein smoothie recipe is bursting with flavor from mango, strawberries and fresh OJ, and you’d never know that we snuck in 20g of plant-based protein and an entire cup of kale.

Now, you might be asking yourself how it’s possible to pack that much goodness into one smoothie without it tasting like, well, a blended salad. If that’s you, we’d like to introduce you to our Protein & Kale powder! We made a special blend with plant-based protein from peas, quinoa and chia seeds, and packed in organic kale, barley grass and wheat grass that was all grown on our family farm.

To get the pops of color, blend the mangoes and strawberries with OJ and our Protein & Kale seperately, and layer them together in your glass. Or keep it simple and toss all the ingredients into your blender, and enjoy!

We’ve been growing our organic, nutrient-dense grasses on our family farm in Kansas for over 3 generations. Unfortunately, not every family farm is that lucky. Currently, 175 acres of U.S. farmland is lost to development every. single. hour. Now, we’ve never claimed to be anything other than farmers, but with some quick math it’s easy to see that No Farms means No Food! Strawberry Mango Smoothie Ingredients:

For the mango layer:

Directions:

For a layered protein smoothie: 

  1. Place all of the Mango Layer ingredients in a blender and pulse until smooth. Remove to a glass and set aside.
  2. Place all of the Strawberry Layer ingredients in a blender and pulse until smooth.
  3. Pour smoothie into a new glass, alternating the mango mixture and the strawberry mixture to create layers of flavor!

For a mango strawberry protein smoothie:

  1. Place all of the ingredients in a blender and pulse until smooth. Pour into a glass and enjoy!

We saw that Rachael’s Good Eats made a cookie skillet with ice cream, and thought, “can we add protein & greens to that?” So we did, and it’s really good.

It’s recipes like this that make us feel a bit better about reaching for seconds on dessert! Each batch of this protein cookie dough is packed with 20g of plant-based protein from peas, quinoa and chia seeds, and an entire cup of organic kale. You can thank our Simply Vanilla Protein & Kale for that!

Not only is kale a hearty green that’s low in calories, high in fiber with virtually 0 fat, it’s also a great source for iron and vitamin K! Iron is especially tough to get on a plant-based diet, so combining kale in our protein powder was a natural combination.

But wait! There’s more!

Kale is filled with powerful disease-fighting antioxidants like carotenoids and flavonoids, can help lower cholesterol, and has more calcium per calorie than milk! It’s also high in vitamins A and C, and contains 10% of the RDA of omega-3s. Basically, it’s a powerhouse of a leafy green and we just baked it into a cookie.

Protein Chocolate Chip Cookie Skillet Ingredients:

Directions:

  1. Preheat oven to 325°F and prepare an 8-9″ cast iron skillet with a small amount of oil.
  2. In a medium mixing bowl, prepare flax egg and set aside to thicken. Once thick and no water remains, pour in maple syrup, melted coconut butter, cashew butter, vanilla, and almond milk. Mix until just combined.
  3. Sift together almond flour, Protein & Kale powder, baking soda, cinnamon and sea salt. Add to the wet ingredients, and stir until just combined. Fold in the chocolate chunks.
  4. Press the protein cookie dough into the skillet, creating an even layer.
  5. Bake for 15-20 minutes until the top is golden brown and the edges are very lightly crisped.
  6. Top with a couple scoops of Eat Enlightened ice cream, and serve!
