Chocolate Chia Pudding Quinoa Crunch Dirt Cups for Earth Day


For the Chia Pudding:

For the Chocolate Quinoa Crunch Granola:

  • 1 scoop Organic Protein & Kale Smooth Chocolate
  • 1/2 cup apple juice
  • 1/3 cup agave or maple syrup
  • 1/4 cup coconut oil, melted
  • 3 cups oats
  • 1 cup uncooked quinoa
  • 1/2 cup pepitas
  • 1/2 cup sunflower seeds
  • 1 teaspoon cinnamon


For the Chia Pudding:

  1. Add all ingredients to a food processor or high-speed blender, and pulse until combined, about 30 seconds. If mixture is too thick to blend, add more milk as needed.
  2. Remove to a bowl and place in fridge to thicken for at least 1 hour.

For the Quinoa Crunch Dirt Cups:

  1. Preheat oven to 325°F and line a baking tray with parchment paper.
  2. In a medium saucepan over medium heat, whisk together Organic Protein & Kale Smooth Chocolate, apple juice, agave and coconut oil, mixing until mixture is thick and creamy.
  3. Meanwhile, place oats, pepitas, sunflower seeds, quinoa and cinnamon in a large mixing bowl. Pour liquid mixture over oats, stirring to combine and coat. Spread evenly on prepared baking tray.
  4. Bake 45 minutes, until granola is very fragrant and dry. Remove from oven and allow to cool completely on sheet. Use your hands to break apart the granola, and store in an air-tight container until ready to use.

Assembling the Dirt Cups:

  1. Once the chocolate chia pudding is thick, layer the chia pudding and quinoa crunch into serving cups and enjoy!
